- 2 rotisserie chickens, shredded (white and dark meat, no skin)
- 3 stalks celery, grated
- 1 shallot, grated
- salt and pepper
- herbs: chives, dill or chopped tarragon
- 1/2 cup mayo
- 1 Tbsp Dijon mustard
- 3 Tbsp rice vinegar
- 1/2 tsp onion powder
- bread of your choice
- 1 Tbsp chopped pistachios

Shred the meat from both chickens into bite-sized pieces. Remove skin and bones. You want a mix of white and dark meat for flavour and moisture.

In a large bowl, add the shredded chicken, grated celery, grated shallot, onion powder, salt and pepper.
