Viral Chicken Salad Boujie Style

Ingredients

  • 2 rotisserie chickens shredded (white and dark meat, no skin)
  • 3 stalks celery grated
  • 1 shallot grated
  • salt and pepper
  • herbs: chives dill or chopped tarragon
  • 1/2 cup mayo
  • 1 Tbsp Dijon mustard
  • 3 Tbsp rice vinegar
  • 1/2 tsp onion powder
  • bread of your choice
  • 1 Tbsp chopped pistachios

Instructions

Prep the Chicken

  • Shred the meat from both chickens into bite-sized pieces. Remove skin and bones. You want a mix of white and dark meat for flavour and moisture.

Build the Base

  • In a large bowl, add the shredded chicken, grated celery, grated shallot, onion powder, salt and pepper.

Make the Dressing

  • In a small bowl, whisk together the mayo, mustard and rice vinegar. Pour over the chicken mixture and stir to combine. Taste and adjust seasoning. Chill for at least 30 minutes. Spoon generously onto your bread of choice or serve in a lettuce cup.
