The “Wildly Chic” Cocktail – A pink gin cocktail party sipper

For our Wild About You party, we wanted one of our signature cocktails to be as fabulous as the guest of honor. Something bold, beautiful and with a glamorous pink stenciled hot lips on the foam. The Wildly Chic is a Gin Cocktail that has notes of raspberry, tropical fruits and citrus. A gin based cocktail is a fun, flirty and Insta worthy cocktail for a ladies lunch.

Party Easy – This is easy to make in a batch for a group and to just add the egg white to create the foam for each drink.

What You’ll Need

Fresh
  • raspberries (for syrup)
  • lemons
  • egg whites
Pantry/Bar
  • sugar
  • pink gin
  • passion fruit or tropical fruit juice

How to Make the White Chocolate Leopard Print Garnish

  • Melt the chocolate: Gently melt 1 cup of white chocolate in a microwave safe bowl.
  • Tint the chocolate: Set aside 1/4 cup and tint it with black food coloring. Take another 1/4 cup and tint it with hot pink food coloring. Transfer each color into a small piping bag or a plastic zip-lock bag with the tip snipped.
  • Create the Leopard Pattern: Line a baking sheet with parchment paper. Pipe small hot pink dots spaced out across the paper. Use the black chocolate to pipe “c” or “u” shapes around each dot to mimic leopard spots. Chill the cookie sheet in the refrigerator for 5-10 minutes, until firm.
  • Finish with a White Chocolate Layer : reheat the remaining plain white chocolate if it has thickened. Pour it gently over the set leopard spots and spread evenly with a spatula.
  • Cool and Break: Chill again until firm. Once fully set, break into shards or chunks to use as cocktail garnishes, cupcake toppers or edible flair.

  • 1/2 cup raspberries
  • 1/2 cup sugar
  • 1/2 cup water

Wildly Chic Cocktail

  • 1 oz raspberry syrup
  • 4 oz pink gin
  • 1 oz freshly squeezed lemon juice
  • 2 oz tropical juice
  • 2 egg whites

Steps

Raspberry Syrup- In a small sauce pan, combine the raspberries, sugar and water. Bring to a boil, reduce heat and simmer for 5-7 minutes until thick and bright red. Strain through a fine mesh sieve and cool. You’ll need 1 oz for the cocktail and can refrigerate the rest for up to a week.

Dry Shake – In a shaker without ice yet, add the raspberry syrup, pink gin, lemon juice, tropical juice and egg whites. Shake for 20 secondes to build the foam.

Add Ice – Shake again with ice until well chilled. Strain into a coupe or martini glass.

Stencil – Let the foam settle, place the stencil close to the foam, dust the beet powder over the stencil for some bright pink lips.

Expert Tips and Tricks

Make It Vegan: Swap the egg whites for 3 Tbsp of aquafaba (chickpea water) for a plant based foam

Pre-Chill Your Glasses: This helps the foam set beautifully and elevates your cocktail.

Stencil Magic: Use a lightweight stencil (we used coffee art stencils) and gently dust over the foam using a mesh sieve and beet powder (an edible powder)

Glitter – We also added a spritz of glitter around the edge to make it even more fabulous

FAQ

Can I make this without pink gin? Yes! Use regular gin and add a splash of cranberry juice or even hibiscus tea for the signature pink hue.

Is it safe to use raw egg whites? Use pasteurized egg whites or opt for aquafaba if you’re concerned.

Can I make it ahead of time? You can pre-mix the liquids(excluding the egg whites), then shake with egg whites right before serving them for the best foam.

Can I make it less sweet? The gin adds a herbaceous note to this drink but it does have a lot of simple syrup in it. You may want to cut the raspberry syrup in half or completely omit it.
