Wildly Chic Gin Cocktail

Raspberry Syrup
- 1/2 cup raspberries
- 1/2 cup sugar
- 1/2 cup water
Wildly Chic Cocktail
- 1 oz raspberry syrup
- 4 oz pink gin
- 1 oz freshly squeezed lemon juice
- 2 oz tropical juice
- 2 egg whites
Raspberry Syrup- In a small sauce pan, combine the raspberries, sugar and water. Bring to a boil, reduce heat and simmer for 5-7 minutes until thick and bright red. Strain through a fine mesh sieve and cool. You'll need 1 oz for the cocktail and can refrigerate the rest for up to a week.
Dry Shake - In a shaker without ice yet, add the raspberry syrup, pink gin, lemon juice, tropical juice and egg whites. Shake for 20 secondes to build the foam.
Add Ice - Shake again with ice until well chilled. Strain into a coupe or martini glass.
Stencil - Let the foam settle, place the stencil close to the foam, dust the beet powder over the stencil for some bright pink lips.
