  • pineapple (for garnish – optional but NOT optional because it is so chic)

  • pineapple juice

Ingredients

  • 1.5 oz of Amaretto (almond liqueur)
  • 2 oz pineapple juice
  • 2 oz sparkling water/club soda
  • ice

Steps

Pineapple Garnish – Cut the skin off of your pineapple. Thinly slice your pineapple (1/8″ thick). Pat dry with a paper towel. Place each slice onto a parchment lined cookie sheet and bake at 200 degrees F for 2-3 hours. Let cool in a muffin tin to curl

Ice – Fill a glass with ice (we love a coupe or a wine glass)

Add – Pour in your amaretto, pineapple juice and top with sparkling water. Stir gently.

Garnish with your Pineapple flower or just a slice of fresh pineapple and some berries.

Expert Tips and Tricks

Make the Pineapple Flowers: Slice the pineapple very thinly, 1/8″ thick. Bake at 200F for 2-3 hours until dry but still flexible. Let cool in a muffin tin to curl.

The Right Pineapple: The thinner you slice your pineapple the more delicate the petals will look. Riper pineapples are easier to slice and taste better.

Chill your Ingredients: Keep everything cold for the best spritz expereince – no shaking required.

Batch for Parties: Combine your amaretto and pineapple juice in a pitcher and top with bubbles when ready to serve.

How long will my pineapple flowers last? Store them in an airtight container for 2-3 days. Similar to how long freshly cut pineapple would last in the fridge.

What if I don’t have Amaretto? You can substitute with another nutty liqueur like Frangelico but the flavour will be different.

Can I Use Prosecco instead of Sparkling Water? Prosecco would make this fancier and up the alcohol level. It would taste amazing and I would highly recommend.
