Grilled Cedar Planked Brie with Strawberry Balsamic Glaze
When it comes to outdoor entertaining sometimes you want something a little more dramatic and fancy. Serving a charred cedar plank with a wheel of Brie bubbling will for sure make your evening a little more special. The sweet-tangy strawberry balsamic glaze with some toasty almond is smokey, gooey and delicious. This is a perfect appetizer for summer BBQs, or a cozy outdoor fall dinner.

- 1 cup fresh strawberries, chopped
- 1/4 cup balsamic vinegar
- 2 Tbsp brown sugar
- 1 Tbsp honey
- pinch of salt
- pinch of chili flakes (optional, for heat)
- 1 8 oz wheel of Brie
- 2 Tbsp shaved almonds
- 1 cedar plank

Make The Strawberry Glaze
In a small saucepan, combine strawberries, balsamic vinegar, brown sugar, honey, salt, and chili flakes (if using).
Simmer over medium heat for 15 minutes until thickened and glossy.
Remove from heat and refrigerate for 30 minutes to allow flavours to meld.

Prepare the Brie
Soak cedar plank in water for an hour to prevent burning on the grill.
Slice the top rind off of the Brie wheel – the lets the cheese mix directly with the strawberry glaze.

Grill the Brie
Place the Brie on the soaked cedar plank.
Spoon strawberry balsamic glaze over the top.
Sprinkle with shave almonds.
Place plank on the grill. Cover and cook for about 10 minutes, until Brie is gooey and bubbling.

Serve
Carefully remove plank from grill. Serve immediately with crostini, crackers, or apple slices for dipping.
Tips and Tricks
Soak the cedar plank – Don’t skip this step. It may catch on fire and although that may make a good story it will also cause you some stress.
Make glaze ahead – The strawberry balsamic sauce can be made 1-2 days ahead and stored in the fridge.
Cheese Options – Camembert or goat Brie also work well.
Pairing Suggestions – Try serving this with a crisp chilled rose, a sparkling champagne or a light Pinot Noir.
FAQ
Can I bake this instead of grilling? Of course! Place the Brie on a parchment lined baking sheet, top with the glaze and almonds. Bake at 375 for 12-15 minutes. Don’t use the cedar plank.
Do I have to cut off the top of the Brie? It’s optional, but cutting it allows the strawberry glaze to sink in and mix directly with the melty cheese.
Can I make this nut free? You bet! Just omit the almons and replace with some toasted pumpkin seeds.
