Ingredients

  • 1 cup fresh strawberries chopped
  • 1/4 cup balsamic vinegar
  • 2 Tbsp brown sugar
  • 1 Tbsp honey
  • pinch of salt
  • pinch of chili flakes optional, for heat
  • 1 8 oz wheel of Brie
  • 2 Tbsp shaved almonds
  • 1 cedar plank

Instructions

Make The Strawberry Glaze

  • In a small saucepan, combine strawberries, balsamic vinegar, brown sugar, honey, salt, and chili flakes (if using).

  • Simmer over medium heat for 15 minutes until thickened and glossy.
  • Remove from heat and refrigerate for 30 minutes to allow flavours to meld.

Prepare the Brie

  • Soak cedar plank in water for an hour to prevent burning on the grill.

  • Slice the top rind off of the Brie wheel - the lets the cheese mix directly with the strawberry glaze.

Grill the Brie

  • Place the Brie on the soaked cedar plank.
  • Spoon strawberry balsamic glaze over the top.
  • Sprinkle with shave almonds.

  • Place plank on the grill. Cover and cook for about 10 minutes, until Brie is gooey and bubbling.

Serve

  • Carefully remove plank from grill. Serve immediately with crostini, crackers, or apple slices for dipping.
