  • 1.5 kg Italian sausage meat (mild or hot)
  • 2 large eggs
  • 1 cup grated cheddar cheese
  • Puff pastry sheets, thawed but still cold

In a large bowl, combine the sausage, eggs and grated cheese. Mix until fully combined. Your hands work best here.

Assemble the Sausage Rolls

  1. Lay a sheet of cold puff pastry on your work surface.
  2. Spoon the sausage mixture into a long, even line along one edge.
  3. Roll the pastry over the filling to tightly for one large log.
  4. Pinch the seam closed.
  5. Cut into 1 inch pieces for mini sausage rolls.
  6. Arrange on a parchment lined baking sheet, sausage side facing up. This allows it to brown nicely.
  7. Optional: Brush the tops with a beaten egg for a glossy golden finish.

Hot or Mild Italian Sausage: I find the best option is a mix of both. It gives the best flavour while still being the most approachable for your guests. Either way use a high quality sausage with lots of fennel.

Serve these by themselves or with some condiments. We suggest:

  • Hot honey drizzle
