Ingredients

  • 1.5 kg Italian sausage meat mild or hot
  • 2 large eggs
  • 1 cup grated cheddar cheese
  • Puff pastry sheets thawed but still cold

Instructions

Make the Filling

  • In a large bowl, combine the sausage, eggs and grated cheese. Mix until fully combined. Your hands work best here.

Assemble the Sausage Rolls

  • Lay a sheet of cold puff pastry on your work surface.
  • Spoon the sausage mixture into a long, even line along one edge.
  • Roll the pastry over the filling to tightly for one large log.
  • Pinch the seam closed.
  • Cut into 1 inch pieces for mini sausage rolls.
  • Arrange on a parchment lined baking sheet, sausage side facing up. This allows it to brown nicely.
  • Optional: Brush the tops with a beaten egg for a glossy golden finish.

Bake at 400 degrees Fahrenheit for 25-30 minutes, or until

  • . the sausage is fully cooked
  • . the pastry is puffed and golden
  • . the tops have some crispy caramelized cheese bits

To Freeze

  • Place unbaked rolls on a parchment lined tray in a single layer. Freeze until solid; 2-3 hours. Transfer to a freezer-safe bag or container.

Bake From Frozen

  • Bake at 400 degrees for 30-45 minutes, until fully golden and cooked through.
