- 1.5 kg Italian sausage meat (mild or hot)
- 2 large eggs
- 1 cup grated cheddar cheese
- Puff pastry sheets, thawed but still cold

In a large bowl, combine the sausage, eggs and grated cheese. Mix until fully combined. Your hands work best here.

Assemble the Sausage Rolls
- Lay a sheet of cold puff pastry on your work surface.
- Spoon the sausage mixture into a long, even line along one edge.
- Roll the pastry over the filling to tightly for one large log.
- Pinch the seam closed.
- Cut into 1 inch pieces for mini sausage rolls.
- Arrange on a parchment lined baking sheet, sausage side facing up. This allows it to brown nicely.
- Optional: Brush the tops with a beaten egg for a glossy golden finish.
