  • 2 rotisserie chickens, shredded (white and dark meat, no skin)
  • 3 stalks celery, grated
  • 1 shallot, grated
  • salt and pepper
  • herbs: chives, dill or chopped tarragon
  • 1/2 cup mayo
  • 1 Tbsp Dijon mustard
  • 3 Tbsp rice vinegar
  • 1/2 tsp onion powder
  • bread of your choice
  • 1 Tbsp chopped pistachios
