Viral Grinder Salad

Ingredients

For the Salad:

  • 4 cups cooked pasta or orzo cooled (al dente)
  • 1 cup cherry tomatoes halved
  • 1/4 cup diced sun-dried tomatoes
  • 1 cup bocconcini mini mozzarella balls
  • 1/2 cup chopped cucumber
  • 1/2 red onion finely diced
  • 3 oz salami chopped
  • 1 handful arugula or baby spinach roughly torn
  • 1/3 cup finely chopped banana or cherry peppers
  • 1/4 cup grated Parmesan cheese

Dressing:

  • 1 clove garlic finely chopped or grated
  • 3 Tbsp mayo
  • 2 Tbsp red wine vinegar
  • 1/2 cup Italian dressing
  • Drizzle of balsamic vinegar for finishing
  • Flaky sea salt to finish

Instructions

Get Pasta Ready.

  • Cook your pasta to al dente, rinse under cold water, and let it cool completely

Combine Salad

  • In a large bowl, combine the pasta, tomatoes, sun-dried tomatoes, bocconcini, cucumber, red onion, salami, arugula, peppers, and Parmesan.

Make the Dressing

  • In a separate small bowl, whisk together the garlic, mayo, red wine vinegar, and Italian dressing. Pour the dressing over the pasta salad and toss to coat every bite.

Finish the Salad

  • Drizzle balsamic vinegar and a generous sprinkle of flaky salt.

Chill for at least 30 minutes to let the flavours meld. Good luck not eating it right away.
