Flakey Pie Crust

Ingredients

  • 2 1/2 cups all purpose flour
  • 1 tsp salt
  • 1 Tbsp sugar
  • 1 cup unsalted butter very cold and cubed
  • 6-8 Tbsp ice water

Instructions

  • In a large bowl, whisk together flour, salt, and sugar
  • Add cold butter cubes and cut into the flour with a pastry cutter (or pulse in a food processor) until pea-sized crumbs form.
  • Drizzle in ice water 1 Tbsp at a time, mixing gently with a fork until dough just holds together.
  • Divide dough in half, shape into discs, wrap in plastic wrap, and chill at least 1 hour before rolling out.
  • Roll dough on a floured surface, place in pie dish, trim edges as needed.

Tip

  • For extra flakiness, keep everything as cold as possible - chill your rolling pin and even the flour if your kitchen is warm.
