Easy Crispy Sous Vide Fried Chicken

This recipe guarantees crispy, golden skin with perfectly juicy meat every time. The chicken is sous vide in a buttermilk marinade and then finished with a deep fry; maximizing flavour and texture. Ideal for comfort food nights, champagne dinners or showing off the best fried chicken of your life.

Ingredients

  • 8 chicken drumsticks or thighs bone-in

Marinate the Chicken

  • 2 cups buttermilk
  • 1 Tbsp hot sauce
  • 1 Tbsp garlic powder
  • 1 Tbsp paprika
  • 2 tsp sugar
  • salt and pepper

The Dredge

  • 1 cup flour
  • 1/4 cup cornstarch
  • 1 tsp cayenne
  • 1 tsp paprika
  • 1 tsp chili powder
  • 1 tsp baking powder
  • salt and pepper to taste
  • 2 eggs

Instructions

Marinate the Chicken

  • In a large zip-top bag, combine the ingredients and the chicken.

Sous Vide Cook

  • Submerge the bagged chicken into the water bath to sous vide. Cook at 165 degrees Fahrenheit for 2-4 hours for a traditional tender texture. Once cooked, transfer chicken to an ice bath for 10-15 minutes to firm up the chicken.

Make the Dredge

  • Mix all of the dry ingredients in a shallow bowl. Crack the eggs into a separate bowl for dipping. Whip the eggs slightly

Dredge and Fry

  • Shake off the marinade and dip the chilled chicken into the egg , then into the flour mixture. Double dredge if you want it extra crispy.

  • Fry in 375 degree F oil until golden brown - about 2-4 minutes.

  • Sprinkle with Malden salt right after frying.

Notes

If you decide you'd like to do a Fried chicken sandwich sub out the bone in chicken thighs for boneless and change the sous vide settings to 145 degrees F for 2 hours.  This recipe takes the stress out of serving your loved ones under cooked chicken.  You just get to focus on that golden crispy skin.
