Easy Crispy Sous Vide Fried Chicken

- 8 chicken drumsticks or thighs bone-in
Marinate the Chicken
- 2 cups buttermilk
- 1 Tbsp hot sauce
- 1 Tbsp garlic powder
- 1 Tbsp paprika
- 2 tsp sugar
- salt and pepper
The Dredge
- 1 cup flour
- 1/4 cup cornstarch
- 1 tsp cayenne
- 1 tsp paprika
- 1 tsp chili powder
- 1 tsp baking powder
- salt and pepper to taste
- 2 eggs
Dredge and Fry
Shake off the marinade and dip the chilled chicken into the egg , then into the flour mixture. Double dredge if you want it extra crispy.
Fry in 375 degree F oil until golden brown - about 2-4 minutes.
Sprinkle with Malden salt right after frying.
If you decide you'd like to do a Fried chicken sandwich sub out the bone in chicken thighs for boneless and change the sous vide settings to 145 degrees F for 2 hours. This recipe takes the stress out of serving your loved ones under cooked chicken. You just get to focus on that golden crispy skin.
