Dirty Dr. Pepper Cookies
A chewy coconut kissed cookie with a bright lime glaze - Swig inspired after your favourite dirty soda. It's sweet, citrusy and fun.

Servings: 20 cookies
- 1 cup butter, softened
- 1 cup brown sugar
- 1/2 cup white sugar
- 2 large eggs
- 2 tsp vanilla extract
- 1 tsp almond extract
- 1 tsp baking soda
- 1/2 cup Dr. Pepper
- 3 cups all-purpose flour
- 3/4 cup sweetened shredded coconut
Lime Glaze
- 1 1/2 cup powdered sugar
- 1 Tbsp fresh lime juice
- 1 Tbsp milk
- 1 tsp lime zest
Preheat oven to 350. Line baking sheets with parchment paper.
In a large bowl, cream together the butter, brown sugar, and white sugar until light and fluffy. (2-3 minutes)
Beat in eggs, vanilla and almond extract until smooth
Add the baking soda and Dr. Pepper, mix until combined.
Slowly add the flour and mix until just combined. Fold in the coconut.
Scoop dough into balls and place 2" apart on the baking sheet.
Bake for 10-12 minutes, or until edges are lightly golden an centers are set. Cool on the pan for 5 minutes before transferring.
Make the Lime Glaze
In a small bowl, whisk together powdered sugar, lime juice, milk and zest until smooth.
Once cookies are cool, spoon or drizzle glaze over the tops.
Optional: Sprinkle extra lime zest or coconut on top
